Ingredients
For the Filling:
- 1 lb lean ground beef
- 1 cup diced yellow onion
- 1 cup mini pepperoni (or chopped regular pepperoni)
- 1 cup pizza sauce (plus extra for topping)
- 1 tsp garlic powder
- 1 tsp dried oregano
- ½ tsp red pepper flakes (optional)
- Salt and pepper to taste
For Assembly:
- 8 medium flour tortillas
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 cup pizza sauce (for topping)
- Fresh basil or parsley (for garnish)
Instructions
1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Cook the Filling:
- In a large skillet over medium heat, cook the ground beef and diced onions until the meat is browned and the onions are soft—about 6–8 minutes.
- Drain any excess fat.
- Stir in pepperoni, 1 cup of pizza sauce, garlic powder, oregano, and red pepper flakes.
- Simmer for 2–3 minutes, then remove from heat.
3. Assemble the Enchiladas:
- Lay out each tortilla.
- Spoon about ¼ cup of the beef mixture down the center.
- Sprinkle a bit of mozzarella cheese over the filling.
- Roll up the tortilla and place seam-side down in a greased 9×13 baking dish.
- Repeat with all tortillas.
4. Top and Bake:
- Spread 1 cup of pizza sauce evenly over the rolled tortillas.
- Sprinkle with the remaining mozzarella and Parmesan cheese.
- Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.
5. Garnish and Serve:
- Let cool slightly, then garnish with chopped fresh basil or parsley.
- Serve hot with a green salad or garlic bread.
