🍕 Pizza Enchiladas Recipe 🌯


Ingredients

For the Filling:

  • 1 lb lean ground beef
  • 1 cup diced yellow onion
  • 1 cup mini pepperoni (or chopped regular pepperoni)
  • 1 cup pizza sauce (plus extra for topping)
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes (optional)
  • Salt and pepper to taste

For Assembly:

  • 8 medium flour tortillas
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup pizza sauce (for topping)
  • Fresh basil or parsley (for garnish)

Instructions

1. Preheat Oven:

Preheat your oven to 375°F (190°C).

2. Cook the Filling:

  • In a large skillet over medium heat, cook the ground beef and diced onions until the meat is browned and the onions are soft—about 6–8 minutes.
  • Drain any excess fat.
  • Stir in pepperoni, 1 cup of pizza sauce, garlic powder, oregano, and red pepper flakes.
  • Simmer for 2–3 minutes, then remove from heat.

3. Assemble the Enchiladas:

  • Lay out each tortilla.
  • Spoon about ¼ cup of the beef mixture down the center.
  • Sprinkle a bit of mozzarella cheese over the filling.
  • Roll up the tortilla and place seam-side down in a greased 9×13 baking dish.
  • Repeat with all tortillas.

4. Top and Bake:

  • Spread 1 cup of pizza sauce evenly over the rolled tortillas.
  • Sprinkle with the remaining mozzarella and Parmesan cheese.
  • Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.

5. Garnish and Serve:

  • Let cool slightly, then garnish with chopped fresh basil or parsley.
  • Serve hot with a green salad or garlic bread.

Optional Toppings:

  • Sliced black olives
  • Diced bell peppers
  • Mushrooms
  • Crushed red pepper
  • Extra pepperoni on top
