✨ Ingredients (Serves 4–6)

½ pound ground beef (85/15)

1 small onion, diced (optional, for flavor)

1 cup corn (canned, frozen, or fresh)

⅔ cup condensed cream of mushroom soup

½ cup sour cream

1 cup shredded cheddar cheese (divided)

1 teaspoon garlic powder

½ teaspoon black pepper

½ teaspoon paprika (optional, for color)

16 oz bag frozen tater tots

  1. Cook the beef:

In a large skillet over medium heat, cook the ground beef (and onion if using) until browned.

Drain excess fat.

  1. Mix the filling:

Add corn, cream of mushroom soup, sour cream, ½ cup shredded cheddar, garlic powder, pepper, and paprika.

Stir until everything is well combined and creamy.

  1. Assemble the casserole:

Preheat oven to 375°F (190°C).

Grease a 9×9-inch (or similar) baking dish.

Spread the beef mixture evenly in the dish.

Top with a single layer of frozen tater tots.

  1. Bake:

Place in oven and bake uncovered for 35–40 minutes, until the tater tots are golden brown and crispy.

  1. Cheesy finish:

Sprinkle remaining ½ cup shredded cheddar cheese over the top.

Bake an additional 5 minutes, until cheese is melted.

  1. Serve:

Let it rest 5 minutes before serving.

Garnish with fresh parsley or green onions if desired.
