French Onion Soup
Introduction:
This classic French Onion Soup is a comforting and rich dish, perfect for cold weather or any time you crave something hearty. With caramelized onions, savory broth, and a golden, melty cheese topping, it’s a dish that’s sure to satisfy.
Ingredients:
- 4 large onions (thinly sliced)
- 2 tablespoons butter
- 1 tablespoon olive oil
- 4 cups beef broth (or vegetable broth for a lighter version)
- 1/2 cup dry white wine (optional)
- 2 cloves garlic (minced)
- 2 sprigs fresh thyme
- 1 bay leaf
- Salt and pepper to taste
- 1/2 teaspoon sugar (to caramelize the onions)
- 4 slices of French baguette
- 1 1/2 cups grated Gruyère cheese (or Swiss cheese)
Instructions:
- Caramelize the onions:
In a large pot, heat the butter and olive oil over medium heat. Add the thinly sliced onions, sugar, and a pinch of salt. Cook the onions, stirring occasionally, for about 30-40 minutes until they become golden brown and caramelized. - Add garlic and deglaze:
Once the onions are caramelized, add the minced garlic and cook for about 1 minute until fragrant. If using wine, pour it in now to deglaze the pan, scraping up any bits from the bottom of the pot. Let the wine reduce for 2-3 minutes. - Simmer the soup:
Add the beef broth, thyme, and bay leaf to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes. Season with salt and pepper to taste. - Prepare the bread:
While the soup is simmering, toast the baguette slices until they are crispy and golden. Set them aside. - Assemble the soup:
Preheat the oven to 375°F (190°C). Ladle the soup into oven-safe bowls. Place a slice of toasted baguette on top of each bowl and sprinkle generously with grated Gruyère cheese. - Broil the soup:
