Ingredients:
1 (12-ounce) can Spam, sliced
4 slices sandwich bread
2 tablespoons butter
2 slices American or cheddar cheese (optional)
2 tablespoons mayonnaise
1 tablespoon yellow mustard
2 lettuce leaves (optional)
2 tomato slices (optional)
Instructions:
Slice the Spam into 1/4-inch thick slices. Heat a skillet over medium heat and cook the Spam slices for 2 to 3 minutes per side until browned and slightly crispy on the edges. Remove from the pan and set aside.
Butter one side of each slice of bread. Place the bread butter-side down in the skillet and lightly toast until golden. Flip and toast the other side if desired.
Spread mayonnaise and mustard on the inside of the toasted bread. Place the fried Spam slices on one slice of bread. Add cheese on top of the hot Spam so it begins to melt.
Add lettuce and tomato if using, then top with the second slice of bread.
Serve warm for a crispy, savory sandwich that’s simple, hearty, and full of old-school comfort.
